Orange Popsicles
I've been in popsicle heaven for the last few weeks.
You see, I recently became the very excited owner of a Zoku popsicle maker (and accessories!) that freezes popsicles in 10 minutes or so. I like it because I can think about popsicles, make them, and eat them almost immediately.
I coveted the little maker for about a year before I received it and the accessories as birthday gifts, and I haven't looked back. If you're not an early adopter of popsicle technology, fear not. You can still make these popsicles with a traditional popsicle mold or even juice glasses with spoons or regular popsicle sticks. I even made one in a juice glass with a spoon to confirm that it works perfectly.
So, whatever equipment you have, as long as you can juice up some oranges, work a blender, strain, and pour, you'll be set to eat popsicles and sing Jan and Dean's "Popsicle."
Notes:
You don't need a Zoku to make these popsicles; a regular popsicle mold (or juice glasses with popsicle sticks or spoons) works just fine, although they won't be ready immediately.
Ingredients:
4 oranges
1 lemon (zest + juice)
½ cup cold water
3 tablespoons granulated sugar
Yields 7-8 Zoku popsicles, or however many 2 cups of liquid makes in your popsicle molds
Peel, Blend, Strain, Freeze:
Peel the oranges, removing as much pith as possible, and place the segments in a blender with the lemon zest, lemon juice, water, and sugar. Blend until everything is liquefied. Use a fine-mesh strainer to remove the solids. You should have around 2 cups of liquid. Pour the strained juice into popsicle molds and freeze. Pin It
