Vanilla Concord Grape Popsicles


Is there anything that says summer like a nice grapey popsicle eaten on the back step in the shade?  A few weeks ago, that is exactly what my parents, nephews, and I were doing.  We wrapped the boys up in clean kitchen towels so they wouldn't stain their clothes and had these popsicles for dessert after lunch.  The boys really enjoyed them and their chorus of "Mmmmmm, Aunt Julie. These are really good!" made my heart melt.


If you haven't tried Concord grapes before, I highly recommend them.  Their grape flavor is incredible and these popsicles are a perfect way to enjoy them.  Yum! 


Notes:
You can also use Thomcord grapes for this recipe.  I took the stems off the grapes and washed them before I measured them out.  Unless your food processor is huge, you will want to process the grapes in two or three batches.  If you try to process them all at once you will have a mess.  I don’t recommend using regular green or red grapes for this recipe.  Concord or Thomcord grapes are definitely the way to go!  I froze these in my Zoku, but regular popsicle molds will work too.

Ingredients:
⅔ cups chilled vanilla simple syrup
6 cups (~2 pounds) washed and stemmed Concord grapes

Yields 9 -10 Zoku pops

Process, Strain, Stir, Freeze:
Process the washed and stemmed grapes in the food processor in two or three batches until they are a nice juicy mess.  Strain the mixture through a fine mesh strainer to remove the seeds and skins.  Press down really hard on the skins and seeds to extract all of the juices.  You should have about 2 cups of juice.  Discard the solids.  Stir in the chilled vanilla simple syrup.  Chill the mixture (30 minutes to an hour) and then freeze it with a Zoku.  If you’re using regular popsicle molds, there is no need to chill the mixture before freezing in the molds.  Enjoy!
